Supplies:

  • Mixing bowl medium size

  • Ice cream machine

  • Spatula

  • Scale

  • silicone matt

Yield:

1.5L

Basic Vanilla Ice cream

Ingredients:

  • 270g sugar

  • 700milk

  • 300ml heavy cream

  • 10 eggs yolks

  • 4 stalks lemon grass

Steps:

  1. In a saucepan, bring the heavy cream to a boil. Add lemongrass and remove from heat, allowing the mixture to infuse with lemongrass flavor.

  2. In a separate bowl, combine the egg yolks and half of the sugar

  3. After 15-20 minutes, add the remaining sugar to the the infused heavy cream, bring back to a boil and temper the egg yolks. Gradually add the hot milk mixture to the yolks and stir well

  4. Return to the stove on medium low heat use whisk or spatula stirring constantly until the mixture thickens.

  5. Test its consistency by running your finger through it.

  6. Chill in the fridge overnight before churning the ice cream.
