Palets de Dames
Palets de Dames are soft French cookies with a delicate buttery texture and rum-soaked raisins.
They are simple, elegant, and lovely for cookie boxes, tea time, or gifting.
Ingredients
80 g raisins
80 g rum, for soaking
125 g unsalted butter, softened
125 g sugar
2 eggs
150 g pastry flour
1 pinch salt
1/2 tsp vanilla
Before You Start
Soak the raisins in rum before making the dough.
Butter should be soft, not melted.
Add the eggs one at a time so the batter mixes smoothly.
Drain the raisins before adding them if there is extra rum.
Method
Soak the raisins in the rum until softened.
Cream the butter and sugar until smooth and light.
Add the eggs one at a time, mixing gently after each addition.
Add the vanilla and mix until combined.
In a separate bowl, mix the pastry flour and salt.
Add the dry ingredients to the butter mixture and mix until just combined.
Fold in the soaked raisins.
Scoop or spoon small portions of batter onto a lined baking tray.
Bake at 175°C, 350°F, until the edges are lightly golden.
Let the cookies cool completely before serving.

Baker’s Note
If you do not want a strong rum flavor, soak the raisins at least 1-2 weeks, then drain them well before adding them to the batter.
For a family-friendly version, you can soak the raisins in warm water or orange juice instead.
