Angel food cake tube pan
Ingredients:
12 egg white /360g
185g sugar
2g cream of tartar
114g flour
185g sugar
1 lemon zest
2 tsp lemond juice
1 tsp vanilla powder
Steps:
in a bowl of a stand mixer, separate the 360g egg white from the yolk or measure out 360g of egg white from a carton.
Keep the egg yolks for another recipe.
Add the sugar and cream of tartar to the egg white.
Use a balloon whisk to whip the egg white into meringue.
In a separate bowl, mix the remain sugar and flour together.
Once the egg white is ready, add the vanilla zest and lemon juice.
Gently fold the flour into the meringue in three separate additions.
Spoon the cake batter into a clean cake pan; no need to grease the pan with oil or butter.
Preheat the oven to 350F, then reduce the temperature to 325F and bake for 40-50 minutes.
