Hamburger Butter Brioche

Yield:

Supplies:

  • Mixing bowl medium size or stand mixer

  • Scale

Ingredients: 

Dough:

  • 310g all purpose flour

  • 1 tsp salt

  • 3 tbsp sugar

  • 2 tsp inland dry yeast

  • 180g butter

  • 3 large eggs

Steps: 

  1. Using a dough hook, mix all ingredients for 15 minutes or until the dough forms into a ball.

  2. Transfer to a bowl, cover, and let it proof for 40 minutes.

  3. After proofing, keep the dough in the fridge overnight. Roll it out and bake it the next day. You don’t want the butter to melt in your hand, so it needs to be cold before rolling.

  4. The next day, divide the dough into 5 portions of 150g each. These are extra large buns.

  5. Proof in the oven proofer for 40 minutes. Don’t forget to add a small bowl or baking dish filled with hot water in the oven, or let it stay at room temperature for 1-2 hours.

  6. Bake at 350F-375F for 15.

Beef Patty

  1. The patty I use is lean organic ground beef. What makes the best flavor from the patty is just to add salt and pepper and lightly pack it.

  2. I divided the meat into 180g-200g portions each, obviously this is jumbo size.

  3. The condiments include caramelized onions, bacon, triple-fried potatoes, homemade pesto, mayo, lettuce, tomatoes, and pickled cucumbers.

  4. Cook the meat for 7-8 minutes on each side.

  5. Depending on how you like your patty cooked, the internal temperature should reach 160F.

  6. Check the center of the patty, if it is firm it is cooked. If the patty is still soft to the touch, then it needs more time.
