Ingredients:
Pie Shell: The dough can be prepared a day before, Keep it cold in the fridge roll out and bake on the next day.
400g all purpose Flour
¼ tsp salt /pinch
200g un salt butter
200g white sugar
2g baking powder/ ½ tsp
2 large whole eggs
Chocolate filling:
225g dark chocolate or semi sweet chocolate
150g butter
45gsugar
2 yolks
2 whole eggs
Steps:
For the pie shell/crust:
Use hands or a food processor to combine flour, salt, baking powder, sugar, and butter in the mixing bowl. If you use a food processor, only make a few pulses or break the butter by hand into small, fine crumbs.
Add in the eggs and mix all the ingredients together. When it forms a dough, divide it in half, wrap it, and chill it in the fridge for 30 minutes. Do not overwork it!
Roll the dough to 1/4 inch thickness or thinner if you prefer, rolling it to the size of the tart mold.
Refrigerate the pie dough. When the pie dough is cold and set firm in the fridge, it's ready to bake.
For the chocolate filling:
Combine eggs and sugar and whip the eggs until double in size and foamy.
Use a microwave or double boiler to melt the chocolate and butter in a separate bowl.
Gently fold in the melted chocolate into the egg mixture.
Spread a thin layer of raspberry puree and some fresh berries of your choice.
Pour the batter into the cold pie dough.
Bake for 30-40 minutes in an oven at 350 degrees Fahrenheit, until the crust is golden brown.
Wait for the pie to cool down before removing it from the mold.
