Coconut Buns

Sweet Dough
Ingredients:
330g bread flour
1/2 tsp salt
1 1/2 tbsp milk skim milk powder or use coconut milk powder
60g sugar
1 large whole egg
120ml water (use coconut milk for more coconut flavour if prefer
10g instant yeast
40g butter
1/2 cup sweet decadent shreded coconut
Steps:
In the mixing bowl of a stand mixer, combine all the ingredients. Attach the dough hook and mix on low speed for 10 -15 minutes, until the dough becomes elastic and forms a ball. This can also be done by hand, but the stand mixer is recommended for best results.
Transfer the dough to a medium-sized bowl that has been lightly dusted with flour or oil. This will prevent the dough from sticking to the bowl. Cover the bowl and keep it in a warm place for 2 hours to allow the dough to rise and double in size.
Once the dough has risen, it is ready to be divided. Divide the dough into 12 small chunks, each weighing around 50g. Roll each chunk into a ball and line them up on a baking tray in a 3x5 or 4x4 formation, depending on the size of the tray you are using. Sprinkle the dough balls with shredded coconut for added flavor and texture.
To proof the dough, either place it in an oven proofer for 40 minutes or leave it at room temperature for 2 hours. This will allow the dough to rise further and develop a light and airy texture.
Preheat your oven to 350-375F.
In a small bowl, whisk together the egg, milk, and a pinch of salt to create an egg wash. Brush the tops of the dough balls with the egg wash, which will give the bread a shiny and golden crust.
Bake the bread in the preheated oven for 15-20 minutes, depending on the heat of your oven. Keep a close eye on the bread during baking and adjust the time if necessary. The bread is done when it turns a golden brown color.
Once baked, remove the bread from the oven and let it cool on a wire rack. Serve warm or at room temperature, and enjoy!
