Creme Brulee Recipe:



Ingredients: 

Make 6 ramekins









  • 5 eggs yolks

  • 90g sugar

  • 500 ml heavy cream

  • 1 vanilla bean (prefer) or 2 tsp vanilla extract

Steps: 

  1. Preheat the oven to 330°F. Separate eggs, setting egg whites aside. Mix half the sugar, egg yolks, and 3 tablespoons of cream in a bowl.

  2. Scrape vanilla bean seeds into the bowl and whisk until combined.

  3. Boil remaining cream and sugar in a saucepan, then turn off heat.

  4. Temper hot cream into egg mixture and pour back into saucepan.

  5.  Cook the mixture over medium-high heat, stirring constantly, until it steams (1-2 minutes). Then, reduce heat to low and stir for 10-15 minutes, or until the custard thickens, giving it a creamy texture.

  6. Pour into ramekins and bake in a tray with 1 cup of water at 330F for 15-20 minutes.

  7. Avoid over-baking; the custard is ready when it has a jelly-like consistency and doesn't stick to your finger.

Tips:

 

1. Use high-quality ingredients, especially eggs and cream.

Add water to the baking tray (water bath)

2. Temper egg yolks by gradually adding warm cream mixture.

3. Cook custard base to 180°F (82°C) for optimal texture.

4. Strain custard base to prevent lumps and ensure smoothness.

5. Pour water into baking tray before bake.

7. Chill in the refrigerator for at least 2 hours.

 

Caramelizing Sugar:

1. Use granulated sugar for caramelizing.

2. Sprinkle sugar evenly over chilled custard.

3. Caramelize with a kitchen torch or under the broiler.

4. Watch closely to avoid burning.

 

Additional Tips: 

1. Use room temperature eggs for easier tempering.

3. Avoid overbaking, which can cause curdling.

4. Experiment with flavorings like coffee, lemon, raspberries or lavender.

5. For a crispy caramel topping, chill custard in the freezer for 30 minutes before caramelizing.

2. Too firm: Overbaking or insufficient cream.

3. Too soft: Underbaking or excessive cream.
