Stand mixer/ Electric blender or regular blender machine
Ingredients:
5 yellow onions
200g sugar/ 1 cup sugar
100 ml /1/2 cup Cherry vinegar
100 ml/ 1/2 cup White balsamic vinegar
2 thyme sprigs
1 tsp salt
Oil for cooking
Steps:
Slice the onions into thin slices or chunks, then cook them on low with the lid on until softened and caramelized.
Next, add sugar, vinegar, salt, and herbs, and cook for 20 minutes.
Cool the mixture to room temperature for 4-6 hours or overnight.
After cooling for 4 hours, simmer the onions again on low for 20 minutes to thicken and translucent. Remove the thyme and transfer the onions to a jar for refrigeration.
