Heavenly Eggless Lemon Tiramisu

If ever there was a dessert that could be called a slice of heaven, it would undoubtedly be the Lemon Tiramisu. Imagine, if you will, a harmonious blend of decadent layers, where each bite is as refreshing as a sunlit Mediterranean morning. This exquisite creation marries the zesty allure of lemons with the rich, comforting embrace of classic tiramisu, offering a symphony of flavors that dance across the palate.

 

The journey begins with ladyfingers drenched in a luscious lemon limoncello syrup, their delicate texture providing the perfect canvas for the vivid citrus notes to shine. This spirited infusion imbues each bite with an intoxicating aroma, awakening the senses and setting the stage for what's to come.

 

Between these layers, a velvety lemon mascarpone cream awaits. This isn't just any mascarpone; it's a silken cloud kissed by the essence of lemons, which adds a creamy complexity to the dessert. Lemon Tiramisu Recipe:

Yield:

  • One 8-inch /5 in food storage box

Supplies:

  • Stand mixer or hand mixer

  • Mixing bowl medium size

  • saucepan

  • Spatula

  • Cake mold/cake ring

  • Container/mason jars/serving cup

  • Whisk

  • Scale

Lemon tiramisu recipe components :

  • 1 recipe lady finger sponge or store bought lady finger cookies

  • 1 preserve lemon for garnish

  • 1 recipe lemon curd

  • 1 recipe lemon mascarpone cream

  • Lemon syrup and limoncello liqueur*

  • 1 fresh lemon or lemon reserve


Prepare for lady finger sponge

Lemon curd recipe:

Ingredients:

  • 2 large eggs

  • 80ml lemon juice

  • 150g butter

  • 120g sugar

  • 1 lemon zest

  • 3g gelatin optional soak in 30ml cold water

Steps:

  1. To prepare the mixture, combine all ingredients in a saucepan and whisk over medium-high heat until the lemon mixture becomes cloudy and bubbly

  2. Then remove from heat, stir in cubed butter and lemon zest, and refrigerate in a sealed container.

  3. It can be stored in the freezer for up to a month.

Lady Finger Sponge Recipe:

Ingredients:

Lady finger sponge bake in round cake mold

  •    6 egg yolks (120g)

  •    3.5 egg whites (110g)

  •    75g all-purpose flour

  •    50g cornstarch

  •    35g white sugar use for the egg yolks

  •    55g white sugar for the egg white

 

Steps: 

  • In the bowl of a stand mixer, use a balloon whisk. Whisk the egg whites, caster sugar, and cream of tartar to soft stiff peaks.

  • Combine the egg yolks, sugar, flour, and cornstarch, then fold in the egg white meringue in three additions.

  • Pipe with Ateco round tip number 7-8, or a tip-less bag, to 4 inches in length.

  • This recipe makes 24 lady fingers cookies or one round 8-inch cake pan and 12 lady finger cookies for decoration.

  • Bake at 350°F for 15-20 minutes.


Lemon Mascarpone cream recipe:

Add cold water to gelatin powder

Ingredients:

  • 9g gelatin

  • 60ml cold water

  • 550g cream

  • 475g mascarpone

  • 165 white chocolate chopped*.

  • *White chocolate make the mixture rich and creamy but you can replace to icing sugar.

Mascarpone mixture was set overnight in the fridge

Steps:

  1. To activate gelatin, soak it in cold water.

  2. Combine cream and mascarpone cheese in a medium saucepan, bringing to a boil.

    Turn off the heat incorporate white chocolate and gelatin, stirring until the chocolate is fully melted

  3. Transfer the ganache to a container and refrigerate overnight.

  4. Whip the mascarpone mixture with 1/4 cup lemon curd or 4 tbsp lemon curds before use

Whip the ganache mascarpone mixture that was set overnight in the fridge with lemon curd.

Lemon Syrup recipe:

Ingredients:

  • 1 cup/250ml water

  • 2 tbsp brown sugar

  • ½ lemon juice

  • ¼ cup /50ml limoncello liquor

Steps:

  1. Combine all the ingredients, ensuring they are well mixed until the sugar is fully dissolved.

*Limoncello is an Italian liquor made from lemon zest, lemon juice. Add liquor to the syrup to enhance lemon flavour if you able to consume liquor, otherwise feel free to omit it if you do not drink liquor

Assemble Tiramisu:

Assemble Lemon tiramisu :

Once all components are prepared, submerge the ladyfinger in lemon syrup and position it at the bottom of the rectangular container, as seen in my YouTube video, mason jar, or serving cup. Apply the lemon mascarpone cream, followed by spoonful of lemon curd, and repeat the process. Finally, finish by arrange some thin slices of lemon or lemon preserve on top.
