No-Bake Apple Crumbles

A quintessential apple crumble features a luscious autumn apple filling nestled in a buttery crust, crowned with a layer of crunchy, baked crumbles. It can be enjoyed either hot or cold, though I believe it's at its finest when served warm, accompanied by a cool scoop of vanilla ice cream. My twist on this beloved comfort dessert is a no-bake version, perfect for serving chilled. Imagine a mason jar filled with layers of velvety mousse, tangy apple compote, and decadent salted caramel, all topped with crunchy baked cookie crumbles. Delicious!

There are 4 component recipes to prepare; however, they are so easy and simple to make, all the components can be prepare a day ahead.

Yield:

  • 8 -12 servings

Supplies:

  • 8-12 individual 6 oz clear glasses or 6-8 individual 8 oz Mason jars

  • Mixing bowl medium size or stand mixer

  • Spatula

  • Whisk

  • Scale

Ingredients: 

Apple:

  • 4-5 grand smith apple wash and peel

  • 1 tbsp butter

  • 50g caster sugar

  • 1tsp cinnamon

  • 1 tsp lemon juice

Cream Cheese mousse filling:

  • 330g cream cheese

  • 600ml heavy cream

  • 150g icing sugar

Crumbles:

  • 150g all purpose flour

  • 100g castor sugar

  • 100g melt butter

  • a salt pinch

  • a pinch of cinnamon (option)

Steps: 

Apple filling:

I like to use granny smith apples. They’re crunchy and starchy. They cook perfectly with a bit of lemon juice and sugar

  1. Peel and chop 5 apples

  2. Heat butter to a skillet, add chopped apple, continue add caster sugar and lemon juice

  3. Stirring well

  4. Add cinnamon, stirring until the juice is reduced the apples are almost dry

  5. Set aside and let cool

Cream cheese mousse fillng:

  1. 600 ml heavy cream

  2. Add 150g icing sugar to the cream

  3. Whip the cream and icing sugar until stiff

  4. Set aside and Keep cold in the fridge

  5. In the stand mixer bowl add cream cheese use the flag hook beat the cream cheese until it’s soft, smooth and has no lumps

  6. Gradually incorporate whipped cream into the soft cream cheese

  7. Mix until well combined

Crumbles topping:

  1. In a bowl add flour, sugar, melt butter

  2. a pinch of salt and a dash of cinnamon as optional

  3. Spread evenly on baking tray

  4. Bake for 20 minutes

  5. Turn mix halfway through baking

  6. Bake until golden brown

Assemble:

when you have everything ready, cooked apple, soft salt caramel, cream filling, crumbles and the prepare clean jars.

  1. Put the cooked apples at the bottom of the jar

  2. Drizzle salt caramel, then pipe the cream filling

  3. Repeat for another layer.

  4. Top with lots of crunchy crumbles, the crumbles complete the dessert.
