Ingredients:
Basic Meat Marinate sauce:
3 tbsp Soy sauce
1 tbsp Dark soy sauce (for deep color and flavor)
2 tbsp Fish sauce (can replace with fermented soybeans)
2 tbsp Honey
Give it a mix. Now you have the sauce. It has the balance of salt and sugar to taste, but home cooking is up to your preferences. If you like it sweeter, add more sugar or honey. That is the beauty of home cooking
Honey Glaze BBQ Pork ingredients:
1 kg pork shoulder /2 lbs pork shoulder each
1 small piece fresh ground ginger or 1 tsp of ground ginger
1 tbsp Chinese Cooking wine
Also add 2 cloves of minced garlic
1/2 tsp Five-spice Chinese powder, sprinkle on the meat
2 tbsp red food color (optional)
Marinate sauce
Steps:
Pour the marinate sauce over the meat. Reserve 1 tbsp for glazing. I cook one piece and keep one piece in a ziplock bag in the freezer for another time. Marinate the pork in the fridge for 24 hours, even better for 2 days.
Now, prepare for the grill or roast it in the oven. Place the meat right in the center and cover the grill. Cook on medium-low heat at 325°F for 30 minutes on each side.
After the pork has cooked on both sides, glaze the pork by mixing 1 tbsp honey and 1 tbsp of the marinate sauce.
Use a brush to baste on both sides of the meat. Cook for another 10 minutes on each side. When the internal temperature of the pork has reached 160°F.
