Yule Log-Tiramisu
The Yule log is a cherished holiday tradition that I always look forward to on Christmas Eve during dinner. This year, I prepared a Yule log in tiramisu flavor using a jelly sponge to hold the cake as a Yule log instead of ladyfingers. The sponge cake is relatively simple, requiring only a few ingredients.
Swiss Roll Recipe:
Supplies:
Combine all ingredients to container or blender

Stand mixer/ Electric blender or regular blender machine
Yield:
1 Yule log serve 8-10 people
Jelly roll sponge
Prepare time: 40 minutes
Ingredients:
4 eggs 3 yolks
85g sugar
35g flour
40g potato starch
1 package of vanilla sugar
a pinch of salt
Steps:
Sift the flour and potato starch together, then add vanilla and 1/2 amount of sugar and pinch of salt
Separate the eggs, using 7 egg yolks and 4 egg whites.
Make sure to use room temperature eggs, not cold ones.
Use the extra egg white to make meringue mushrooms for decoration later.
In a mixing bowl, whip the yolks and one-third of the sugar until the sugar dissolves and the mixture becomes pale.
In a separate bowl, add the remaining sugar to the egg whites, then whip the egg whites to medium-stiff peaks.
Fold one-third of the egg whites into the egg yolk mixture and mix until combined. Then add half of the remaining egg whites, making a few folds in the bowl before transferring the yolk batter back to the whipped egg whites
Make a quick mix, then fold in the flour in three additions. You can use a whisk to mix the batter until well combined.
Pour the batter onto an 11-by-16-inch baking tray lined with parchment paper, and use an offset spatula to flatten the surface.
Tap the tray on the counter to reduce air bubbles.
Bake at 400-420°F for 10-15 minutes, depending on the oven; don't forget to check and rotate if necessary.
Coffee Syrup Recipe:
Ingredients:
Sugar syrup
200 hot water
150g sugar
2 tsp coffee instant (decaf optional)
Steps:
Bring water to a boil or utilize hot water to dissolve the sugar and instant coffee, then allow it to cool prior to soaking the cake.
Mascarpone cream whipped
Ingredients:
8g gelatin
60ml cold water
550 ml heavy cream
475g mascarpone
165g white chocolate
Steps:
Combine gelatin and cold water, setting it aside to bloom.
In a separate saucepan, combine mascarpone cheese and heavy cream, bringing the mixture to a boil. Upon reaching the boiling point, remove from heat and add white chocolate and the bloomed gelatin, stirring until the chocolate is fully incorporated and melted.
Transfer the mixture to a container and refrigerate overnight or for a minimum of 6 hours to chill.
When the mixture has chilled, whip out up before using

Assemble the yule log
To assemble the Yule log, unroll the cake, soak it with coffee syrup, then evenly spread the whipped mascarpone cream to a uniform thickness of 1/2 inch. Sprinkle cocoa powder, gently roll, refrigerate to chill and set. After the roll has chilled, soak it with more coffee syrup on the outside and apply a layer of mascarpone cream to cover the cake entirely.
Sprinkle cocoa powder uniformly over the cake. Frozen the yule log for about 2 hours before cutting the two ends to achieve a nice clean cut, and decorated it with shaved chocolate, meringue mushrooms.
Light sponge cake, rich and creamy mascarpone with deep coffee flavour.
Tips:
1. Room temperature ingredients*: Ensure eggs, butter, and milk are at room temperature for a smooth batter.
2. Sift dry ingredients*: Sift flour, sugar, and baking powder to incorporate air and prevent lumps.
3. Don't overmix: Mix wet and dry ingredients separately and gently fold them together. the best result when you baking cake, make sure all ingredients stay in room temperature at least 2-4 hours . Do not process when the butter and eggs are cold.
Common mistakes:
1. Cracking: Caused by overbaking, overrolling, or sudden temperature changes. Solution: Adjust baking time, roll gently, and cool slowly.
2. Breaking: Caused by overfilling or improper rolling. Solution: Adjust filling amount and roll tightly but gently.
