Ultimate Blueberry Pancake Recipe:

Supplies:

  • Mixing bowl medium size or tall container

  • Whisk

  • Spatula

  • Scale

  • measurement cups

  • frying saucepan /grill skillet

  • Stand mixer/ Electric blender or regular blender machine

Ingredients: 

  • 1 cup flour

  • 3 eggs

  • 1 tbsp cooking oil (veg oil, sunflower oil, canola oil)

  • 1 1/4 cup whole milk

  • 2 tbsp brown sugar

  • 1/2 tsp salt

  • 1 tbsp baking powder

  • 1/2 cup blueberries (you can use frozen if fresh not available)

  • 1/4 cup butter cut to cubes for the pancake (optional)

  • Maple syrup or pancake syrup

  • Steps:

Combine all ingredients to container or blender

Pour the batter into the hot skillet then lower heat down to low

  1. Combine dry ingredients first then wet ingredients (except blueberries) in a medium bowl and mix until smooth using an immersion or regular blender.

  2. The batter should be thick and fluffy.

  3. Heat a skillet, add oil, and pour in the batter. Half cup for each

  4. Top with blueberries, cover and cook on low for 2 minutes per side

  5. Serving warm with butter and syrup.

Tips:

For the best result when you baking cake, make sure all ingredients stay in room temperature at least 2-4 hours . Do not process when the butter and eggs are cold.
