Italian Buttercream Recipe
Yield:
900g Italian buttercream, to cover one 8 in three layers cake
Supplies:
Stand mixer machine
Mixing bowl
Whisk
Spatula
Mixing bowl medium size
Scale
Soften butter in room temperature.
Ingredients:
450g/1 lbs of un-salt butter soften room temperature
150g egg whites
50ml water
300g sugar
1 tbsp vanilla extra or 1 vanilla bean
Adding soften butter to meringue
Steps:
Beat the egg whites until soft peaks form.
Heat the sugar and water to 115°C.
Pour the mixture into the beaten egg whites and continue beating until slightly cooled and stiff peak, glossy and still warm to the touch.
Add the softened butter and mix until smooth and creamy.

Troubleshooting Buttercream Problem
When you mix cold buttercream, it will split and curdle. Use bath marine or microwave for a few second to soften the butter
If you accidentally overheat the icing, the icing is too running, transfer it to a bowl and place it in a larger bowl of cold water to chill it while continuing to whisk until it sets.
