Pumpkin Spice Cake
Ingredients:
Spices mix:
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp all spices
Pinch of cloves
Pinch of nutmeg
Cake:
265g all purpose flour /2 1/4 cups
4 g baking soda/3/4 tsp
5 g baking powder/3/4 tsp
1 tsp salt
100g brown sugar/ 1/2 cup
120g white sugar/1/2 cup
150g pumpkin puree 2/3 cup
1 tbsp honey add to the puree
3 large whole eggs
200ml whole milk/
50ml cooking oil
113g/one stick of soften butter
500g/2 cups prepare cream cheese frosting Recipe
Steps:
Creaming process:
in a bowl of a stand mixer with a flat good creaming butter and sugar. Start on low speed to creamy increase to medium/high take 3 minutes
Back on low speed add in eggs continue to mix the mixture until smooth fluffy and double the size
Turn the mixer off add in flour, milk, pumpkin puree and oil use low speed
Scrape down the side of the bowl and the bottom 2-3 time during this process make sure there is no lumps
Pour half the batter into cake pan then piping or spoon a generous amount of cream cheese frosting. Pour the rest of the batter over the cream cheese and cake batter
Bake at 350F for 40-50 minutes depend on the oven heat
Tips:
For the best result when you baking cake, make sure all ingredients stay in room temperature at least 2-4 hours . Do not process when the butter and eggs are cold.
