Almond Joconde, Coffee Buttercream & Dark Chocolate Ganache

Whenever I stop at a pastry shop and see an Opera cake in the display case, it is usually one of the first cakes that catches my eye.

What I love most is the combination of very thin layers of almond cake, coffee syrup, coffee buttercream, and rich chocolate ganache. Each component is delicious on its own, but together they create the distinctive flavor and texture of an Opera cake: almond, coffee, and dark chocolate in every bite.

The cake is rich, but because the layers are thin, you don't need a large slice. I especially like the contrast between the soft coffee-soaked almond sponge, smooth buttercream, and dark chocolate ganache.

When I made this cake for a friend, she took one bite and told me:

“This chocolate is to die for.”

I think that says enough.

Opera cake may look complicated when you see all those beautiful layers in a pastry-shop display, but it becomes much easier when you think of it as a collection of basic pastry components prepared separately and then assembled.

Your note says four components, but you've actually listed five:

  1. Almond Joconde Sponge

That distinction is useful for teaching the recipe.

Building an Opera Cake

The beauty of an Opera cake comes from its thin, even layers. Rather than making one thick cake and covering it with frosting, each component has a specific purpose.

The joconde provides a thin and flexible almond sponge. The coffee syrup moistens the cake and carries coffee flavor throughout each bite. The coffee buttercream provides richness and a smooth texture, while the dark chocolate ganacheadds intensity and balances the sweetness. Finally, a thin chocolate glaze gives the cake its elegant, glossy finish.

When assembled and chilled, all those individual layers become one cake.

Ingredients

Coffee Buttercream

Ingredients:

350g-400g Italian buttercream

3 tbsp instant coffee

2 tsp hot water

Prepare the coffee buttercream by infusing Italian buttercream with instant coffee. Mix the instant coffee with a minimal amount of hot water, resulting in a deep and intense coffee flavor.

Chocolate ganache

Soft Dark Chocolate Ganache

Ingredients

  • 200g 64% dark chocolate

  • 200ml 35% heavy cream

  • 20g unsalted butter

  • Pinch of salt

Method

  1. Finely chop the dark chocolate and place it in a heatproof bowl.

  2. Heat the cream until hot and just beginning to steam.

  3. Pour the hot cream over the chocolate.

  4. Let stand briefly, then gently stir from the center outward until smooth.

  5. Add the butter and a small pinch of salt.

  6. Mix until completely smooth and glossy.

  7. Allow the ganache to cool until it reaches a soft, spreadable consistency before assembling the cake.

Strong Coffee Syrup

Ingredients

  • 150ml hot water

  • 100g granulated sugar

  • 3 tsp instant espresso powder preferably (decaf instant coffee optional)

Method

  1. Combine the hot water and sugar and stir until the sugar has completely dissolved.

  2. Add the instant espresso powder.

  3. Stir until smooth and fully dissolved.

  4. Allow the syrup to cool completely before using.

Baker’s note

The coffee syrup should taste quite strong on its own. Once it is absorbed by the almond sponge and combined with the coffee buttercream, ganache, and chocolate glaze, the flavor becomes balanced.

I also like your use of decaffeinated instant espresso here. It lets you build a strong coffee flavor without turning a slice of Opera cake into an accidental bedtime negotiation.

Opera cake looks elaborate because of its many thin layers, but each part can be prepared separately. Once all the components are ready, assembly becomes much more manageable.

Almond Joconde Sponge

Joconde is a thin French almond sponge traditionally used for layered pastries such as Opera cake. It is soft and flexible but strong enough to absorb coffee syrup without falling apart.

For my Opera cake, I bake the joconde in an 11 × 16-inch sheet pan. The sponge should be spread evenly so the finished cake layers have a uniform thickness.

Ingredients

  • 110g ground almonds

  • 85g caster sugar

  • 26g arrowroot flour, for a gluten-free version
    or 26g all-purpose flour

  • 4 large whole eggs

  • 1 large egg yolk

  • 3 large egg whites

  • 26g caster sugar, for the egg whites

  • 26g butter, melted

This is the foundation of the Opera cake. The joconde should remain thin, light, and flexible, because it will be layered with coffee syrup, buttercream, and ganache rather than eaten as a thick sponge.

Steps:

  • Preheat the oven to 400°F (205°C). Line an 11 × 16-inch sheet pan with parchment paper.

  • In a medium bowl, combine the ground almonds, 85g caster sugar, and arrowroot flour or all-purpose flour.

  • Add the 4 whole eggs and 1 egg yolk. Whisk until the mixture is smooth and well combined.

  • In a separate clean bowl, whip the 3 egg whites. Gradually add the 26g sugar and continue whipping until the meringue reaches medium-stiff peaks.

  • Fold a portion of the whipped egg whites into the almond-and-egg mixture to lighten it.

  • Add another portion of the meringue and fold gently.

  • Pour this lightened almond mixture into the bowl containing the remaining meringue. Gently fold until evenly combined.

  • Place a small amount of the batter into the melted butter and mix until well combined.

  • Fold this butter mixture gently back into the main batter. This makes it easier to incorporate the butter without knocking too much air from the sponge.

  • Spread the batter evenly over the prepared sheet pan, taking care to maintain an even thickness.

  • Bake at 400°F (205°C) for approximately 10–15 minutes, depending on your oven.

  • Remove from the oven when the sponge is lightly golden and baked through.

  • Remove the parchment paper while the sponge is still warm to prevent it from becoming sticky and difficult to peel away later.

Chocolate Glaze

Ingredients

  • 100g chocolate

  • 100g 35% heavy cream

  • 15ml glucose

  • 10ml neutral oil

Method

  1. Place the chocolate in a heatproof bowl.

  2. Heat the cream and glucose together until hot.

  3. Pour over the chocolate and allow it to sit briefly.

  4. Stir gently until completely smooth.

  5. Add the oil and mix until the glaze is glossy and homogeneous.

  6. Allow the glaze to cool to the proper pouring consistency before glazing the chilled cake.

Soaking syrup

Coffee Buttercream

Ingredients

  • 350–400g prepared Italian buttercream

  • 3 tbsp instant coffee

  • 2 tsp hot water

Method

  1. Prepare the Italian buttercream according to your foundation recipe.

  2. Dissolve the instant coffee in only 2 teaspoons of hot water.

  3. Allow the concentrated coffee mixture to cool.

  4. Gradually mix it into the buttercream until the color and coffee flavor are evenly distributed.

Why So Little Water?

I dissolve the instant coffee in only a small amount of hot water. This creates a concentrated coffee flavor without adding too much liquid to the buttercream.

Assembling the Opera Cake

For the best result, prepare the joconde sponge one day in advance. Bake it in an 11 × 16-inch sheet pan, approximately ½ inch thick, and allow it to cool completely.

Prepare all of the remaining components before beginning the assembly:

  • Almond joconde sponge

  • Strong coffee syrup

  • Coffee Italian buttercream

  • Soft dark chocolate ganache

  • Chocolate glaze

I use decaffeinated instant coffee for both the syrup and buttercream. Instant coffee gives a concentrated coffee flavor without requiring much additional liquid.

1. Prepare the Joconde

Cut the baked joconde into three equal layers.

If using a cake ring or frame, place the first layer of joconde inside it.

Brush or soak the sponge evenly with the prepared coffee syrup. The sponge should absorb plenty of coffee flavor without becoming so wet that it loses its structure.

2. First Layer — Coffee Buttercream

Divide the prepared coffee buttercream into two equal portions.

Spread the first portion evenly over the coffee-soaked joconde.

Take your time to make this layer level. Thin, even layers are what give Opera cake its beautiful appearance when sliced.

3. Second Layer — Chocolate Ganache

Place the second joconde layer over the buttercream.

Soak evenly with coffee syrup.

Spread the soft dark chocolate ganache evenly over the sponge.

The ganache should be soft and spreadable rather than warm or runny.

4. Third Layer — Coffee Buttercream

Place the final joconde layer over the ganache.

Soak again with coffee syrup.

Spread the remaining coffee buttercream evenly over the surface.

Refrigerate until the cake is cold and the layers are firm.

5. Finish with Ganache

Once the cake has set, spread a thin, smooth layer of ganache over the chilled buttercream.

Return the cake to the refrigerator and allow it to set again.

6. Chocolate Glaze

Prepare the chocolate glaze and allow it to cool until it is fluid enough to spread smoothly without melting the layers underneath.

Pour or spread a thin layer of glaze over the cold cake.

The glaze gives the Opera cake its characteristic smooth, glossy chocolate finish.

Refrigerate for several hours, or until all the layers are completely set.

7. Trim & Portion

Remove the chilled cake from the ring or frame, if using.

For clean pastry-shop edges, trim the outside edges of the cake with a sharp knife.

Cut into your preferred portions.

For the cleanest slices, use a warm, clean knife, wiping the blade between cuts.

From My Pastry Kitchen

Opera cake is one of my favorite French cakes. Whenever I see one in a pastry shop, my eyes go to it first. I love its thin almond-cake layers and the combination of coffee, chocolate ganache, and coffee buttercream. It is rich and elegant, and a small slice is enough to enjoy all of those flavors together.

Baking with Confidence

Don't overwhip the egg whites. Medium-stiff peaks provide enough structure while remaining flexible enough to fold into the almond mixture.

Lighten the almond mixture first. Adding some meringue before combining everything makes the heavier almond-and-egg mixture easier to fold into the remaining whites.

Temper the melted butter with batter. Don't pour melted butter directly into the full bowl of airy batter. Mixing it first with a small portion of batter makes the two easier to combine and helps preserve volume.

Fold gently after the meringue is added. Joconde depends on those tiny trapped air bubbles for its light texture.

Spread evenly. This is particularly important for Opera cake because uneven joconde becomes uneven layers once the cake is assembled.

Tips:


For the best result when you baking cake, make sure all ingredients stay in room temperature at least 2-4 hours . Do not process when the butter and eggs are cold.
